VIN 105 MOLECULAR PRINCIPLES IN GRAPE & WINE ...emphasis on chemical fundamentals of winemaking. This course includes organic, biochemistry, and applications with a focus on the grape and wine industry.

What will I learn?

  1. Identify qualitative and quantitative tools of chemistry.  
  2. Discuss chemical structure.
  3. Discuss chemical bonding
  4. Articulate nomenclature, families, structure, properties and reactions of organic compounds. 
  5. Compare and contrast the major types of chemical reactions and quantitative methods of describing the mass relations in those reactions.
  6. Summarize the physical properties of gases.
  7. Analyze the interactions between molecules.
  8. Articulate the properties of solutions.
  9. Discuss chemical kinetics and chemical equilibrium.
  10. Analyze acids, bases and buffers.
