What will I learn?
- Compare the current food system with historical ways people obtained food.
- Examine health and safety standards & regulations and their role in the food system.
- Evaluate four segments of the food system; production, processing, distribution, and consumption.
- Determine if the food system plays a role in climate change.
- Evaluate the role of nutrition in judging the quality of various foods.
- Critique the role of the consumer regarding nutrition, quality, and safety.
- Predict the economic impact of local foods on the local economy.
- Propose a new sustainable food system.
- Project your role in a new, sustainable food system.

i. June 1, 3:30-4:30 pm, mandatory virtual orientation, where:
You’ll get an overview of topics that both courses cover
Canvas (learning platform) course structure, and a plan to work through contact modules will be discussed
ii. June 1 through August 2, complete coursework in Canvas
iii. July 28 in-person lab, 10 am – 3:30 pm, details will follow in class materials.
