  5. Prepare a variety of pies utilizing advanced techniques.
  6. Prepare a variety of dessert sauces.
  7. Prepare a variety of breads utilizing advanced fermentation processes.
  8. Prepare a variety of advanced decorative desserts.
  9. Select, operate, and maintain a variety of equipment, utensils, and tools used in baking.
  10. Apply principles of sanitation, safety, and personal hygiene
  11. Demonstrate proper scaling and measurement techniques.
  12. Modify recipes to accommodate special dietary needs.
